Following a recent trip to the area, I selected Jean-Francois Bordet's fabulous Chablis, after trying twenty different Chablis. I've been using his wines for 15 years but wanted to make sure.
A highly rated, unoaked Chardonnay offering a crisp, mineral-driven experience typical of the region. It features vibrant notes of lemon, green apple, white peach, and verbena. Known for its zesty acidity, it has a long, saline finish.
An ideal pairing for fresh seafood, particularly those with a briny quality.
