Following a recent trip to the area, I selected Jean-Francois Bordet's fabulous Chablis, after trying twenty different Chablis. I've been using his wines for 15 years but wanted to make sure.
A lively, unoaked Chardonnay characterized by crisp green apple, lemon-lime, and intense minerality.
Its high acidity makes it an ideal pairing for fresh, grilled, or poached seafood (oysters, lobster, scallops), goat cheese, and lighter poultry dishes.
