Sorin is the only winemaker in the world to use rotating 76 Hectolitre oak casks for vinification, which keeps the contact of juice and skin and melds the tannins. The wine is then aged in 228-litre French oak barrels for 16 months. Will age for 10 years, but the process allows early drinking.
Parker, the world famous wine critic, has given this wine several scores in the 90s - which puts it in the upper echelons for the region, and globally.
Mourvedre 85%, Syrah 10%, Carignan 5%
Perfumed, complex, rich. Sweet red fruit, a bit of leather, meaty and earthy. Pairs well with game, red meat and aged cheeses, which we stock too!
