The wine was cold macerated for several days before a natural ferment at lower temperatures was superseded by a higher temperature fermentation, some was fermented in oak barrels. The wine was matured in Burgundian oak barrels for 12 months and allowed to go through full natural malolactic fermentation in Spring. Bottled in Jan 2024.
Ideal for creamy white fish, roast chicken, pork, and spicy Sichuan cuisine. Its balanced acidity and slight viscosity allow it to pair well with aromatic, rich dishes and fresh salads.
Its moderate tannins and high freshness make it versatile for rich, savoury dishes.
